Is this the best steak ever?!?

This is the best steak I have ever cooked. EVER. It is hard to estimate how many steaks I have seasoned up and thrown on the grill.

Hundreds? Thousands?

I really can't say, but I eat a lot of steak. I consider myself an expert. I have had the pleasure of dining at some of the best steakhouses in the country. But this one is one of the best.

The perfect temp, medium rare. Just the right amount of smokiness. The perfect crust.

Give it a try.

The how-

2-4 hours before cook time- Salt the steak and leave it in the fridge to dry brine

30 minutes to 1 hour before- Pull steak from the fridge to bring to room temperature

Preheat grill, (I used the Big Green Egg) for indirect cooking to 240-275. We are looking for low and slow to start.

Once the grill is steady, put the steak on over indirect heat until it reaches your desired temp. 124 is where I like to pull the steak

Let the steak rest while you get the grill fired up to blazing temps to sear your steak.

While you wait, pat the steak dry to remove surface moisture. Lighly oil and season the steak to your liking. I prefer salt, pepper, thyme and a touch of garlic powder. Season both sides.

Once the grill is smokin hot, grill. This is a quick sear. I do 25-40 seconds and give the steak a quarter turn and repeat. Don't forget to sear the edges if there is exposed fat.

Give the steak a quick rest, 5 minutes is usually enough. It has already rested once.
